Description

A refreshing and vibrant salad made with ripe tomatoes and crunchy cucumbers, perfect for summer gatherings.


Ingredients

  • 2 large ripe tomatoes, chopped into bite-sized pieces
  • 1 large cucumber, peeled and diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • Salt and pepper to taste


Instructions

  1. Prepare the vegetables: Chop the tomatoes into bite-sized pieces and dice the cucumber into similar sizes, approximately 1-inch pieces.
  2. Slice the onion: Thinly slice the red onion with a sharp knife for nice, even slices.
  3. Combine ingredients: In a large mixing bowl, combine the chopped tomatoes, diced cucumber, and sliced red onions. Optionally, add parsley for freshness.
  4. Dress the salad: Drizzle olive oil and red wine vinegar or lemon juice over the salad, lightly season with salt and pepper.
  5. Toss gently: Use a large spoon or spatula to toss the salad until well-coated in the dressing.
  6. Taste & adjust: Check seasoning and acidity, adding more salt, pepper, or vinegar as needed. Let sit for 5 minutes before serving.

Notes

For a colder salad, chill the ingredients in the refrigerator for 30 minutes before serving. Enjoy fresh within the first day for optimal crunch.
