Ingredients
- 2 large ripe tomatoes, chopped into bite-sized pieces
- 1 large cucumber, peeled and diced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped (optional)
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar or lemon juice
- Salt and pepper to taste
Instructions
- Prepare the vegetables: Chop the tomatoes into bite-sized pieces and dice the cucumber into similar sizes, approximately 1-inch pieces.
- Slice the onion: Thinly slice the red onion with a sharp knife for nice, even slices.
- Combine ingredients: In a large mixing bowl, combine the chopped tomatoes, diced cucumber, and sliced red onions. Optionally, add parsley for freshness.
- Dress the salad: Drizzle olive oil and red wine vinegar or lemon juice over the salad, lightly season with salt and pepper.
- Toss gently: Use a large spoon or spatula to toss the salad until well-coated in the dressing.
- Taste & adjust: Check seasoning and acidity, adding more salt, pepper, or vinegar as needed. Let sit for 5 minutes before serving.
Notes
For a colder salad, chill the ingredients in the refrigerator for 30 minutes before serving. Enjoy fresh within the first day for optimal crunch.
