Description

A flavorful Teriyaki Turkey Rice Bowl combining lean turkey, colorful veggies, and a delicious teriyaki sauce, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb ground turkey
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • Green onions, for garnish (optional)
  • Sesame seeds, for garnish (optional)


Instructions

  1. In a large skillet over medium heat, cook the ground turkey until browned and cooked through, about 6-8 minutes. Drain any excess fat.
  2. Add the broccoli, bell peppers, and carrots to the skillet, cooking until the veggies are tender, about 5-7 minutes.
  3. In a small bowl, mix together the soy sauce, honey or brown sugar, rice vinegar, garlic, and ginger until well combined.
  4. Pour the sauce over the turkey and veggies in the skillet, stirring to combine. Cook for an additional 2-3 minutes until everything is heated through.
  5. Serve the turkey and veggie mixture over cooked rice. Garnish with green onions and sesame seeds if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for longer storage.
