Ingredients
- 8 oz penne pasta
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Parmesan cheese, for serving
Instructions
- Cook the penne pasta according to package directions, usually about 8-10 minutes until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant and lightly golden.
- Add the chopped spinach and cherry tomatoes to the skillet. Stir and cook for about 3-5 minutes, or until the spinach wilts and the tomatoes soften, releasing their juices.
- Combine cooked pasta with the vegetable mixture in the skillet. Gently toss everything together for about 1-2 minutes to allow the flavors to meld. Season with salt and pepper to taste.
- Serve warm, plated generously with grated Parmesan cheese on top for an extra touch of deliciousness.
