Description

A delicious combination of juicy grilled chicken and sweet corn, topped with a creamy, zesty sauce that’s perfect for weeknight dinners or impressing guests.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cotija cheese (crumbled)
  • 1/4 cup cilantro (chopped)
  • 1 lime (juiced)
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat the Grill: Heat your grill to medium-high, around 375°F.
  2. Prepare the Corn Mixture: In a large mixing bowl, blend the corn, mayonnaise, sour cream, cotija cheese, chopped cilantro, lime juice, chili powder, along with salt and pepper.
  3. Season the Chicken: Drizzle olive oil over the chicken breasts, then sprinkle generously with salt and pepper.
  4. Grill the Chicken: Place the seasoned chicken on the grill and grill for about 6-7 minutes on each side.
  5. Add the Corn Mixture: Spoon the corn mixture over the chicken a few minutes before it’s done.
  6. Serve with Style: Transfer the chicken to a serving platter and garnish with additional cilantro and cotija cheese.
