Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup corn (fresh, frozen, or canned)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup cotija cheese (crumbled)
- 1/4 cup cilantro (chopped)
- 1 lime (juiced)
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the Grill: Heat your grill to medium-high, around 375°F.
- Prepare the Corn Mixture: In a large mixing bowl, blend the corn, mayonnaise, sour cream, cotija cheese, chopped cilantro, lime juice, chili powder, along with salt and pepper.
- Season the Chicken: Drizzle olive oil over the chicken breasts, then sprinkle generously with salt and pepper.
- Grill the Chicken: Place the seasoned chicken on the grill and grill for about 6-7 minutes on each side.
- Add the Corn Mixture: Spoon the corn mixture over the chicken a few minutes before it’s done.
