Description
A comforting bowl of lo mein noodles paired with seasoned ground pork and fresh vegetables.
Ingredients
- 8 oz wide Lo Mein noodles, cooked and rinsed
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Cook the Noodles: In a pot of boiling water, cook the Lo Mein noodles according to package instructions. Once cooked, drain and rinse under cold water. Set aside.
- Brown the Pork: In a large skillet, heat 1 tablespoon of peanut oil over medium-high heat. Add the ground pork and 1/4 cup of sliced green onions. Cook, stirring occasionally, for 5-7 minutes until the pork is browned and no longer pink.
- Prepare the Sauce: In a bowl, whisk together the low-sodium chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until combined.
- Combine Ingredients: Add the cooked noodles and coleslaw mix to the skillet with the browned pork. Pour the prepared sauce over the mixture. Toss everything together and cook for an additional 2-3 minutes, or until everything is well-coated and heated through.
- Garnish and Serve: Remove from heat and garnish with the remaining green onions. Serve hot.
