Description

A delicious and easy one-pan dish featuring tender chicken thighs glazed with honey BBQ sauce, served on a bed of fluffy rice and colorful vegetables.


Ingredients

  • 4 chicken thighs
  • 1/4 cup honey
  • 1/2 cup BBQ sauce
  • 1 cup rice
  • 1 1/2 cups chicken broth
  • 1 cup vegetables (bell peppers, onions)
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine honey and BBQ sauce in a mixing bowl.
  3. Season the chicken thighs with salt and pepper, then coat each with the honey BBQ mixture.
  4. Add the rice and chicken broth to a baking dish, mixing well.
  5. Place the coated chicken thighs on top of the rice.
  6. Scatter chopped vegetables over the chicken.
  7. Cover with foil and bake for 25-30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the chicken is golden.
  9. Serve warm and enjoy!

Notes

For added flavor, marinate the chicken for a while before cooking. You can substitute honey with maple syrup if needed.
