Ingredients
- 1 (19 oz) bag frozen cheese tortellini
- 2 tablespoons olive oil
- 1½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- ½ teaspoon black pepper
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika
- 2 tablespoons butter
- ½ cup sun-dried tomatoes in oil, drained and sliced thin
- 3 teaspoons garlic, minced
- 1 cup low-sodium chicken broth
- 2 cups heavy cream
- 1 teaspoon Italian seasoning
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup parmesan cheese, finely shredded
- 2 cups baby spinach, chopped
Instructions
- Start by seasoning your chicken pieces with black pepper, Italian seasoning, and paprika. Give them a good tossing to ensure even coverage, then set aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken and cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Reduce the heat to medium-low, then melt 2 tablespoons of butter in the same skillet. Add the minced garlic and sun-dried tomatoes, sautéing them for about 30 seconds or until fragrant.
- Pour in 1 cup of low-sodium chicken broth and 2 cups of heavy cream. Add an additional teaspoon of Italian seasoning, 1 teaspoon of black pepper, and 1 teaspoon of paprika. Whisk the mixture continuously until it begins to bubble at the edges.
- Slowly whisk in the finely shredded parmesan cheese until it’s completely melted and incorporated into the sauce, creating a luscious and creamy texture.
- Now, return the cooked chicken to the skillet along with the chopped spinach and frozen tortellini. Stir gently to combine and allow everything to simmer for 5 minutes or until the spinach wilts and the tortellini are heated through.
- For the final touch, garnish your plate with fresh parsley and additional parmesan cheese. Serve immediately and relish every comforting bite!

For a gluten-free version, use gluten-free tortellini. Consider adding a teaspoon of red pepper flakes for a spicy twist.
