Ingredients

  • 1 (19 oz) bag frozen cheese tortellini
  • 2 tablespoons olive oil
  • pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • 2 tablespoons butter
  • ½ cup sun-dried tomatoes in oil, drained and sliced thin
  • 3 teaspoons garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup parmesan cheese, finely shredded
  • 2 cups baby spinach, chopped


Instructions

  1. Start by seasoning your chicken pieces with black pepper, Italian seasoning, and paprika. Give them a good tossing to ensure even coverage, then set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken and cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium-low, then melt 2 tablespoons of butter in the same skillet. Add the minced garlic and sun-dried tomatoes, sautéing them for about 30 seconds or until fragrant.
  4. Pour in 1 cup of low-sodium chicken broth and 2 cups of heavy cream. Add an additional teaspoon of Italian seasoning, 1 teaspoon of black pepper, and 1 teaspoon of paprika. Whisk the mixture continuously until it begins to bubble at the edges.
  5. Slowly whisk in the finely shredded parmesan cheese until it’s completely melted and incorporated into the sauce, creating a luscious and creamy texture.
  6. Now, return the cooked chicken to the skillet along with the chopped spinach and frozen tortellini. Stir gently to combine and allow everything to simmer for 5 minutes or until the spinach wilts and the tortellini are heated through.
  7. For the final touch, garnish your plate with fresh parsley and additional parmesan cheese. Serve immediately and relish every comforting bite!
