Ingredients
- 1 lb Chicken
- 1/2 cup Sun-dried tomatoes
- 1/4 cup Pesto
- 2 cups Fresh spinach
- 1 package Potato gnocchi
- 1 cup Cream
- 1/2 cup Parmesan cheese
- Salt to taste
- Pepper to taste
- Crusty baguette
- 1/2 cup White wine
Instructions
- In a large pot over medium-high heat, cook the chicken until golden brown, about 5-7 minutes.
- Add sun-dried tomatoes and pesto, stirring for a couple of minutes until fragrant.
- Pour in chicken broth and bring the mixture to a boil.
- Add potato gnocchi and cook until they float, about 2-3 minutes.
- Stir in fresh spinach and cream, cooking until the spinach wilts, about 2 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese and a side of crusty baguette for dipping.
Notes
Avoid overcrowding the pan when cooking chicken for better browning. Add lemon juice for extra freshness.
