Description

A cozy and creamy chicken soup featuring sun-dried tomatoes and fresh spinach, perfect for quick weeknight dinners.


Ingredients

  • 1 lb Chicken
  • 1/2 cup Sun-dried tomatoes
  • 1/4 cup Pesto
  • 2 cups Fresh spinach
  • 1 package Potato gnocchi
  • 1 cup Cream
  • 1/2 cup Parmesan cheese
  • Salt to taste
  • Pepper to taste
  • Crusty baguette
  • 1/2 cup White wine


Instructions

  1. In a large pot over medium-high heat, cook the chicken until golden brown, about 5-7 minutes.
  2. Add sun-dried tomatoes and pesto, stirring for a couple of minutes until fragrant.
  3. Pour in chicken broth and bring the mixture to a boil.
  4. Add potato gnocchi and cook until they float, about 2-3 minutes.
  5. Stir in fresh spinach and cream, cooking until the spinach wilts, about 2 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with Parmesan cheese and a side of crusty baguette for dipping.

Notes

Avoid overcrowding the pan when cooking chicken for better browning. Add lemon juice for extra freshness.
