Description
A flavorful one-pan dish of creamy orzo pasta, tender chicken, and vibrant spinach, perfect for weeknights or family gatherings.
Ingredients
- 1 lb chicken breast
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 cup grated parmesan cheese
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- 1 tsp Italian seasoning
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, and Italian seasoning, then add them to the skillet. Sear each side until golden brown, about 5–7 minutes per side. Remove the chicken from the skillet and set aside.
- Add minced garlic to the skillet and cook until fragrant, about 30 seconds.
- Stir in chicken broth, heavy cream, and orzo pasta. Bring to a simmer, stirring occasionally.
- Add sun-dried tomatoes and spinach, stirring to combine and allowing spinach to wilt.
- Return seared chicken to the skillet, cover, and cook for about 10–15 minutes, or until orzo is tender and chicken is cooked through.
- Stir in grated parmesan cheese, allowing it to melt into the sauce.
- Serve hot and enjoy!
Notes
For a special touch, serve with extra grated parmesan and garnish with fresh herbs.
