Ingredients
- 2 large potatoes, diced
- 1 pound ground beef or turkey
- 1 tablespoon taco seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 bell pepper, diced
- 1 avocado, diced
- 1 cup shredded cheese
- Sour cream (optional)
- Fresh cilantro for garnish
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced potatoes with olive oil, salt, and pepper in a bowl. Spread them evenly on a baking sheet and roast for 25-30 minutes until golden brown and crispy.
- In a skillet over medium heat, add the ground beef or turkey. Cook for 5-7 minutes until browned, breaking it up as it cooks. Drain any excess fat.
- Stir in the taco seasoning, black beans, and corn. Cook for an additional 3-5 minutes until heated through.
- Layer the crispy potatoes in serving bowls with the meat mixture, diced bell pepper, and avocado.
- Top with shredded cheese, sour cream, and fresh cilantro.
