Description

A hearty and satisfying bowl filled with crispy roasted potatoes, seasoned meat, vibrant vegetables, creamy avocado, and melty cheese, perfect for any weeknight dinner.


Ingredients

  • 2 large potatoes, diced
  • 1 pound ground beef or turkey
  • 1 tablespoon taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1 cup shredded cheese
  • Sour cream (optional)
  • Fresh cilantro for garnish
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper in a bowl. Spread them evenly on a baking sheet and roast for 25-30 minutes until golden brown and crispy.
  3. In a skillet over medium heat, add the ground beef or turkey. Cook for 5-7 minutes until browned, breaking it up as it cooks. Drain any excess fat.
  4. Stir in the taco seasoning, black beans, and corn. Cook for an additional 3-5 minutes until heated through.
  5. Layer the crispy potatoes in serving bowls with the meat mixture, diced bell pepper, and avocado.
  6. Top with shredded cheese, sour cream, and fresh cilantro.
  7. Serve warm and enjoy!
