Ingredients
- 4 chicken breasts
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- 4 tablespoons butter
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1/4 cup fresh lemon juice
- 1/2 cup chicken broth
- 1 tablespoon parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the Parmesan cheese, flour, salt, and pepper in a shallow bowl, mixing well to create an even coating.
- Dredge each chicken breast in the mixture, ensuring they are well coated on all sides.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat until melted.
- Add the chicken breasts into the skillet and cook until golden brown, about 5-7 minutes on each side.
- Remove the chicken from the skillet and set aside.
- Toss in the remaining butter and minced garlic into the same skillet; sauté until fragrant, about 30 seconds.
- Pour in the lemon juice and chicken broth, scraping up any browned bits from the bottom of the pan.
- Return the chicken to the skillet, spooning the sauce over each piece.
- Bake in the oven for 15-20 minutes or until the chicken is cooked through and juices run clear.
- Garnish with freshly chopped parsley and serve hot.
