Ingredients

  • 8 oz bow tie pasta
  • 1 lb Italian sausage
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for serving


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and add the bow tie pasta. Cook according to package instructions, usually about 8-10 minutes, until al dente. Drain and set aside.
  2. Brown the Sausage: In a large skillet, heat a splash of olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook for about 5-7 minutes until it’s browned and cooked through. Remove from the pan and set aside.
  3. Sauté the Vegetables: In the same skillet, add the diced bell peppers, onions, and minced garlic. Sauté for 5-7 minutes or until the vegetables are soft and fragrant.
  4. Combine Ingredients: Return the cooked sausage to the skillet, then stir in the diced tomatoes and Italian seasoning. Mix well and let it simmer for 5-10 minutes until everything is heated through and slightly thickened.
  5. Toss with Pasta: Add the cooked bow tie pasta to the skillet, gently tossing it with the sausage and vegetable mixture until everything is well combined. Season with salt and pepper to taste.
  6. Serve: Transfer to serving plates while hot and generously sprinkle with freshly grated Parmesan cheese.

Notes

For a vegetarian option, try using plant-based sausage. To make it gluten-free, substitute with gluten-free pasta.
