A delicious and comforting dish featuring chicken marinated in Cajun spices served over creamy rice, ideal for weeknight dinners.
Ingredients
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Oregano
- 1 tsp Thyme
- 1 tsp Paprika
- 1 tsp Chilli Powder
- 800 g Chicken Breast (cut into halves)
- 1.5 tsp Cajun Seasoning Mix
- 2 tsp Olive Oil
- 25 g Grass Fed Butter for Cooking
- 1 Medium Red Onion (chopped)
- 4-5 Garlic Cloves (chopped)
- 1/2 tsp Cajun Seasoning Mix (reserve for rice)
- Fresh Parsley (for garnish)
- 15 g Grass Fed Butter
- 1/2 tsp Cajun Seasoning Mix (to add to sauce)
- 250 ml Milk
- 150 g Light Cream Cheese
- 40 g Parmesan
Instructions
- Begin by marinating the chicken breast pieces overnight with 1.5 tsp of Cajun seasoning mix and 2 tsp of olive oil. Ensure each piece is well-coated; an airtight glass container is perfect for sealing in flavor.
- Heat a pan over medium-high heat and melt 25 g of grass-fed butter. Cook the marinated chicken for about 5-7 minutes per side, until it develops a crispy, golden crust. Once cooked, let the chicken rest for a few minutes before slicing it into strips.
- In the same pan, sauté the chopped medium red onion and 4-5 chopped garlic cloves until fragrant, about 2-3 minutes. Add the remaining half teaspoon of Cajun seasoning mix and then toss in the day-old rice. Stir until the rice is well coated with all the flavorful spices, around 2-3 minutes.
- Lower the heat and add 15 g of grass-fed butter to the pan. Slowly whisk in 250 ml of milk, stirring to combine. Once warmed through, add 150 g of light cream cheese and 40 g of Parmesan, stirring until the sauce becomes smooth and creamy. This should take about 3-4 minutes until thick enough to coat a spoon.
- On a plate, layer the Cajun rice, top it with sliced chicken, and drizzle the creamy sauce over everything. Garnish with fresh parsley for a pop of color and extra flavor.
Notes
Marinate the chicken overnight for maximum flavor. This dish can be made ahead and stored in the refrigerator for up to 3-4 days.
