Ingredients
- 6 large eggs
- 1 cup milk
- 1 cup fresh spinach, chopped
- 1/2 cup bell pepper, diced (any color)
- 1/2 cup red onion, finely chopped
- 1 cup cheddar cheese, shredded
Instructions
- Preheat your oven to 350°F (175°C) and spray a muffin tin with non-stick cooking spray.
- Whisk together the eggs and milk until thoroughly combined. Season with salt and pepper to taste.
- Fold in the chopped spinach, diced bell pepper, red onion, and shredded cheddar cheese until evenly distributed.
- Fill each muffin cup about two-thirds full with the egg mixture.
- Bake in the preheated oven for 18-22 minutes, or until the muffins are set, golden on top, and no longer jiggle in the center.
- Remove from the oven and let cool slightly before serving.
