Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Cooked rice or noodles for serving


Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the sliced chicken breast and cook for about 5-7 minutes until browned and fully cooked.
  3. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Stir in the mixed vegetables and cook for another 3-4 minutes until tender-crisp.
  5. Mix together honey, soy sauce, and cornstarch in a bowl until smooth.
  6. Pour the sauce over the chicken and vegetables, stirring to combine.
  7. Cook for an additional 2-3 minutes until the sauce thickens.
  8. Season with salt and pepper to taste.
  9. Serve the stir fry over rice or noodles and enjoy!
