Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup brown rice or quinoa
- 1 cup mixed vegetables (e.g., bell peppers, broccoli, carrots)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or cilantro) for garnish
Instructions
- Start by cooking the brown rice or quinoa according to package instructions.
- While the grains are cooking, season the chicken breasts with garlic powder, paprika, salt, and pepper.
- Heat olive oil in a large skillet over medium heat.
- Once it’s shimmering, place the chicken breasts into the pan.
- Cook for 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- In the same skillet, add the mixed vegetables and sauté for 4-5 minutes.
- To assemble your bowls, divide the cooked grains into serving bowls, top with sliced chicken and vegetables, and garnish with fresh herbs.
- Serve warm and enjoy!
