Description

A refreshing and creamy avocado chicken salad packed with healthy fats and protein, perfect for warm days and meal prep.


Ingredients

  • 2 ripe avocados
  • 2 cups cooked chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 bell pepper, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste


Instructions

  1. Mash the ripe avocados with lime juice in a large bowl until smooth.
  2. Add the shredded chicken, halved cherry tomatoes, diced red onion, bell pepper, and chopped cilantro to the bowl.
  3. Stir gently to combine, keeping some texture from the ingredients.
  4. Season with salt and pepper to taste.
  5. Serve on its own, in tortillas, or on a bed of salad greens.
