Ingredients
- 2 ripe avocados
- 2 cups cooked chicken, shredded
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1 bell pepper, diced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Mash the ripe avocados with lime juice in a large bowl until smooth.
- Add the shredded chicken, halved cherry tomatoes, diced red onion, bell pepper, and chopped cilantro to the bowl.
- Stir gently to combine, keeping some texture from the ingredients.
- Season with salt and pepper to taste.
- Serve on its own, in tortillas, or on a bed of salad greens.
