Description

Delicious ham and cheese egg muffins, perfect for a quick and nutritious breakfast.


Ingredients

  • 6 large eggs
  • 1/2 cup milk
  • 1 cup diced ham (cooked)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced bell pepper (optional)
  • Salt and pepper to taste
  • Fresh herbs (parsley, chives) for garnish


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin generously.
  2. Whisk together the eggs and milk until frothy, about 1-2 minutes.
  3. Stir in the diced ham, shredded cheese, and bell pepper (if using). Season with salt and pepper.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  6. Let them cool in the pan for 5 minutes before transferring to a wire rack.

Notes
