Ingredients
- 8 oz pasta (fettuccine or penne)
- 2 chicken breasts
- 1 bunch asparagus, trimmed
- 1/2 cup pesto sauce
- 1 lemon, juiced
- Olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the pasta: In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside.
- Preheat the grill: Set your grill to medium-high heat, approximately 375°F, allowing it to reach a steady temperature.
- Prepare the chicken: Drizzle olive oil over the chicken breasts, then season generously with salt and pepper. Grill for 6-7 minutes on each side, or until cooked through and juices run clear. Remove from the grill and let rest.
- Grill the asparagus: While the chicken rests, toss the asparagus in olive oil, salt, and pepper. Place it on the grill and cook for about 4-5 minutes, turning occasionally, until tender and slightly charred.
- Slice the chicken and asparagus: Once rested, slice the chicken into strips and cut the asparagus into bite-sized pieces.
- Combine ingredients: In a large bowl, mix together the cooked pasta, grilled chicken, asparagus, pesto sauce, and lemon juice. Toss gently to combine until everything is evenly coated.
