Ingredients

  • 8 oz pasta (fettuccine or penne)
  • 2 chicken breasts
  • 1 bunch asparagus, trimmed
  • 1/2 cup pesto sauce
  • 1 lemon, juiced
  • Olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)


Instructions

  1. Cook the pasta: In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Preheat the grill: Set your grill to medium-high heat, approximately 375°F, allowing it to reach a steady temperature.
  3. Prepare the chicken: Drizzle olive oil over the chicken breasts, then season generously with salt and pepper. Grill for 6-7 minutes on each side, or until cooked through and juices run clear. Remove from the grill and let rest.
  4. Grill the asparagus: While the chicken rests, toss the asparagus in olive oil, salt, and pepper. Place it on the grill and cook for about 4-5 minutes, turning occasionally, until tender and slightly charred.
