Description

A delightful and straightforward one-pan meal featuring juicy chicken thighs and a colorful assortment of roasted vegetables, brightened with lemon and Mediterranean flavors.


Ingredients

  • 4 chicken thighs
  • 2 cups cherry tomatoes
  • 1 red onion, chopped
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 lemon, juiced
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the chicken thighs with olive oil, oregano, lemon juice, and salt and pepper in a large bowl. Toss well.
  3. Let it marinate for about 10 minutes.
  4. Toss the cherry tomatoes, red onion, bell pepper, and zucchini with remaining olive oil and season.
  5. Arrange the chicken and vegetables evenly on a sheet pan.
  6. Roast for 30-35 minutes until the chicken reaches 165°F.
  7. Serve warm and enjoy!
