Description

A comforting, flavorful soup combining tender chicken, fresh spinach, and zesty lemon, perfect for any occasion.


Ingredients

  • 1 lb chicken breast
  • 6 cups chicken broth
  • 1 cup water
  • 1/2 cup orzo or rice
  • 1 lemon (juiced and zested)
  • 2 large eggs
  • 1 cup fresh spinach
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Olive oil
  • Parsley for garnish


Instructions

  1. Heat around 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté for about 5-7 minutes until soft and fragrant.
  2. Add the chicken breast to the pot and cook until browned on all sides, about 5-7 minutes.
  3. Pour in the chicken broth and water, bringing the mixture to a boil.
  4. Once boiling, add the orzo or rice and cook according to package directions (typically around 8-10 minutes) until tender.
  5. Whisk the eggs and lemon juice together in a separate bowl until well combined.
  6. Slowly add a cup of hot broth from the soup to the egg mixture to temper it, stirring constantly to prevent scrambling. Then, stir this mixture back into the soup.
  7. Add the fresh spinach and lemon zest to the pot, cooking until the spinach wilts, about 2-3 minutes.
  8. Season with salt and pepper to taste, and serve hot, garnished with fresh parsley.

Notes

Fresh herbs like dill or thyme can enhance flavors. Use room temperature eggs for better integration.
