A quick and flavorful garlic pesto crusted salmon recipe, ready in under 30 minutes.


Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 1/2 cup prepared basil pesto (homemade or store-bought)
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs (optional for extra crunch)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Lemon wedges, for serving (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the salmon fillets under cold water and pat them dry with paper towels.
  3. Season both sides lightly with salt and pepper.
  4. Combine the prepared basil pesto with minced garlic in a bowl. If using breadcrumbs, mix them in.
  5. Place the fillets skin-side down on a lined baking sheet.
  6. Spread a generous amount of the garlic pesto mixture evenly over each fillet.
  7. Drizzle olive oil over the pesto-coated salmon fillets.
  8. Bake for 15-20 minutes until the salmon is tender and reaches an internal temperature of 145°F.
  9. Optional: Broil for the last 2-3 minutes for a caramelized crust.
  10. Serve hot with a squeeze of fresh lemon juice.

Notes

For a change, use other pestos like sun-dried tomato or spinach. Ensure not to overcrowd the baking sheet.
