A quick and flavorful garlic pesto crusted salmon recipe, ready in under 30 minutes.
Ingredients
- 4 salmon fillets (about 6 ounces each)
- 1/2 cup prepared basil pesto (homemade or store-bought)
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs (optional for extra crunch)
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- Lemon wedges, for serving (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the salmon fillets under cold water and pat them dry with paper towels.
- Season both sides lightly with salt and pepper.
- Combine the prepared basil pesto with minced garlic in a bowl. If using breadcrumbs, mix them in.
- Place the fillets skin-side down on a lined baking sheet.
- Spread a generous amount of the garlic pesto mixture evenly over each fillet.
- Drizzle olive oil over the pesto-coated salmon fillets.
- Bake for 15-20 minutes until the salmon is tender and reaches an internal temperature of 145°F.
- Optional: Broil for the last 2-3 minutes for a caramelized crust.
- Serve hot with a squeeze of fresh lemon juice.
Notes
For a change, use other pestos like sun-dried tomato or spinach. Ensure not to overcrowd the baking sheet.
