Ingredients
- 1.5 pounds Beef stew meat, cut into bite-sized pieces
- 1 pound Baby potatoes, halved
- 4 tablespoons Unsalted butter, melted
- 3 cloves Garlic, minced
- 1 teaspoon Onion powder
- 1 teaspoon Smoked paprika
- 0.5 teaspoon Dried thyme
- 0.5 teaspoon Dried rosemary
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper
- 0.25 cup Beef broth
- 1 tablespoon Olive oil
Instructions
- Gather all ingredients and cut the beef into bite-sized pieces. Halve the baby potatoes for even cooking. Optionally, parboil the potatoes for about 5 minutes.
- Heat olive oil in a skillet over medium-high heat and sear the beef bites for about 5-7 minutes until browned.
- Combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper in a small bowl to create the garlic butter sauce.
- Layer the halved baby potatoes in the slow cooker, followed by the seared beef. Pour the garlic butter sauce over and add beef broth around the edges.
- Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours until the beef is fork-tender.
- Rest the dish for about 10 minutes before serving. Serve hot with a drizzle of garlic butter sauce.
