Ingredients

  • 1.5 pounds Beef stew meat, cut into bite-sized pieces
  • 1 pound Baby potatoes, halved
  • 4 tablespoons Unsalted butter, melted
  • 3 cloves Garlic, minced
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Beef broth
  • 1 tablespoon Olive oil


Instructions

  1. Gather all ingredients and cut the beef into bite-sized pieces. Halve the baby potatoes for even cooking. Optionally, parboil the potatoes for about 5 minutes.
  2. Heat olive oil in a skillet over medium-high heat and sear the beef bites for about 5-7 minutes until browned.
  3. Combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper in a small bowl to create the garlic butter sauce.
  4. Layer the halved baby potatoes in the slow cooker, followed by the seared beef. Pour the garlic butter sauce over and add beef broth around the edges.
  5. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours until the beef is fork-tender.
  6. Rest the dish for about 10 minutes before serving. Serve hot with a drizzle of garlic butter sauce.
