Ingredients
- 2 boneless skinless chicken breasts
- 1 can corn, drained
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes
- 8 oz cream cheese
- 1 packet ranch seasoning mix
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 cup chicken broth
Instructions
- Prepare the Chicken: Start by placing the chicken breasts at the bottom of your crockpot.
- Add the Veggies: Next, add corn, black beans, diced tomatoes, and chicken broth.
- Seasoning Time: Sprinkle ranch seasoning mix, cumin, garlic powder, onion powder, salt, and pepper over the top.
- Creamy goodness: Place cream cheese on top of the layered ingredients.
- Set the Heat: Cover the crockpot and set it to cook on low for 6-8 hours, or on high for 3-4 hours.
- Final Touches: About 30 minutes before serving, use two forks to shred the chicken and stir in the cream cheese.
- Serve Warm: Ladle the chili into bowls and serve hot.
Notes
For variations, add jalapeños for spice or swap the chicken for chickpeas for a vegan option.
