Description

A comforting and flavorful dish featuring tender chicken and creamy tortellini, perfect for busy weeknights.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 package (12-16 oz) refrigerated tortellini
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Place the chicken breasts in the crockpot and season with salt, pepper, and Italian seasoning.
  2. Pour in the chicken broth and diced tomatoes.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. When the chicken is cooked through, shred it with two forks right inside the crockpot.
  5. Stir in the tortellini and heavy cream. Cover the pot again and cook on high for an additional 20-30 minutes, or until the tortellini is tender.
  6. Serve warm, garnished with fresh parsley if desired.

Notes

This dish can be made ahead by prepping ingredients and storing them in the fridge until cooking. For freezing, let it cool completely before transferring to freezer-safe containers.
