A refreshing salad featuring crisp cucumbers and juicy tomatoes, enhanced with a creamy dressing.
Ingredients
- 2 English cucumbers (or 10-12 small ones)
- 4 large tomatoes (sliced into thin wedges)
- 1 red onion (thinly sliced)
- 2 cloves garlic (minced)
- 1/2 cup sour cream
- 1/2 cup plain Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh dill (chopped)
- 1/4 cup green onions (chopped)
- 1/2 teaspoon sea salt (or to taste)
- 1/8 teaspoon black pepper (or to taste)
- Extra dill and green onion for garnish
Instructions
- Combine sour cream, Greek yogurt, lemon juice, minced garlic, and dill in a small bowl. Add salt and pepper to taste. Stir the dressing until well mixed and set aside.
- Slice the cucumbers into thin rounds (or half rounds for larger varieties) and add them to a large mixing bowl.
- Carefully slice the tomatoes into thin wedges and add them to the bowl along with the thinly sliced onion.
- Before serving, stir the dressing into the salad and mix until everything is evenly coated.
- Garnish with additional dill and green onions for an inviting presentation.
Notes
This salad is best served chilled. Store in an airtight container for up to 2-3 days, but do not freeze.
