Description

A refreshing salad featuring crisp cucumbers and juicy tomatoes, enhanced with a creamy dressing.


Ingredients

  • 2 English cucumbers (or 10-12 small ones)
  • 4 large tomatoes (sliced into thin wedges)
  • 1 red onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 1/2 cup sour cream
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill (chopped)
  • 1/4 cup green onions (chopped)
  • 1/2 teaspoon sea salt (or to taste)
  • 1/8 teaspoon black pepper (or to taste)
  • Extra dill and green onion for garnish


Instructions

  1. Combine sour cream, Greek yogurt, lemon juice, minced garlic, and dill in a small bowl. Add salt and pepper to taste. Stir the dressing until well mixed and set aside.
  2. Slice the cucumbers into thin rounds (or half rounds for larger varieties) and add them to a large mixing bowl.
  3. Carefully slice the tomatoes into thin wedges and add them to the bowl along with the thinly sliced onion.
  4. Before serving, stir the dressing into the salad and mix until everything is evenly coated.
  5. Garnish with additional dill and green onions for an inviting presentation.

Notes

This salad is best served chilled. Store in an airtight container for up to 2-3 days, but do not freeze.
