Description
A comforting bowl filled with tender chicken, fluffy grains, and a creamy feta sauce, perfect for weeknight dinners.
Ingredients
- 2 chicken breasts
- 1 cup cooked grains (quinoa, rice, or couscous)
- 1 cup feta cheese, crumbled
- 1/2 cup Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Toppings (e.g., fresh herbs, cherry tomatoes, cucumber, olives)
Instructions
- Cook the grains according to package instructions. This usually will take about 15-20 minutes, depending on which grains you choose. Fluff them with a fork when done.
- Season the chicken breasts generously with salt and pepper on both sides, ensuring even seasoning throughout.
- Heat the olive oil in a skillet over medium heat. Once heated, carefully place the chicken breasts in the skillet. Cook for 6-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should be 165°F). Remove from heat and allow the chicken to rest for a few minutes before slicing.
- Combine the crumbled feta cheese, Greek yogurt, lemon juice, salt, and pepper in a mixing bowl. Stir until the mixture reaches a smooth, creamy consistency.
- Assemble by slicing the cooked chicken and layering it on top of the cooked grains in individual bowls.
- Drizzle a generous amount of the feta sauce over the sliced chicken and grains, ensuring every bite is packed with flavor.
- Top with your choice of additional toppings, such as fresh herbs, sliced cherry tomatoes, cucumber, or olives for a refreshing contrast.
- Serve immediately while warm, and enjoy your delightful creamy chicken bowls!
