Ingredients
- 2 cups white rice
- 4 cups water
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 lime (juiced)
- 1/2 cup chopped fresh cilantro
Instructions
- Rinse the rice under cold water until the water runs clear, eliminating excess starch.
- Bring 4 cups of water to a boil in a large pot over medium-high heat.
- Add the rinsed rice, olive oil, and salt to the boiling water.
- Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is tender.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and gently stir in lime juice and chopped cilantro.
Notes
For best results, use fresh cilantro and consider replacing it with parsley if needed.
