Description

A vibrant blend of cilantro, lime, and fluffy white rice that elevates any meal.


Ingredients

  • 2 cups white rice
  • 4 cups water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 lime (juiced)
  • 1/2 cup chopped fresh cilantro


Instructions

  1. Rinse the rice under cold water until the water runs clear, eliminating excess starch.
  2. Bring 4 cups of water to a boil in a large pot over medium-high heat.
  3. Add the rinsed rice, olive oil, and salt to the boiling water.
  4. Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is tender.
  5. Remove from heat and let it sit covered for 5 minutes.
  6. Fluff the rice with a fork and gently stir in lime juice and chopped cilantro.

Notes

For best results, use fresh cilantro and consider replacing it with parsley if needed.
