Description
A quick and flavorful Chicken Zucchini Stir Fry featuring tender chicken and fresh vegetables sautéed in soy sauce, perfect for busy weeknights.
Ingredients
- 1 lb chicken breast, sliced
- 2 medium zucchinis, sliced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cooked rice or noodles (for serving)
Instructions
- Heat 1 tablespoon of olive oil in a large pan over medium heat for about 1 minute.
- Add 2 cloves of minced garlic and sauté for about 30 seconds until fragrant.
- Cook the sliced chicken breast for 5-7 minutes, stirring occasionally, until golden brown and no longer pink.
- Incorporate the sliced zucchinis and bell pepper, stir-frying for approximately 5 minutes until tender-crisp.
- Pour in 2 tablespoons of soy sauce and season with salt and pepper. Stir well and cook for an additional 2 minutes.
- Serve the Chicken Zucchini Stir Fry hot over a bed of cooked rice or noodles.
Notes
For a gluten-free version, use tamari instead of soy sauce. Make sure ingredients are at room temperature to achieve even cooking.
