Description

A quick and flavorful Chicken Zucchini Stir Fry featuring tender chicken and fresh vegetables sautéed in soy sauce, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breast, sliced
  • 2 medium zucchinis, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked rice or noodles (for serving)


Instructions

  1. Heat 1 tablespoon of olive oil in a large pan over medium heat for about 1 minute.
  2. Add 2 cloves of minced garlic and sauté for about 30 seconds until fragrant.
  3. Cook the sliced chicken breast for 5-7 minutes, stirring occasionally, until golden brown and no longer pink.
  4. Incorporate the sliced zucchinis and bell pepper, stir-frying for approximately 5 minutes until tender-crisp.
  5. Pour in 2 tablespoons of soy sauce and season with salt and pepper. Stir well and cook for an additional 2 minutes.
  6. Serve the Chicken Zucchini Stir Fry hot over a bed of cooked rice or noodles.

Notes

For a gluten-free version, use tamari instead of soy sauce. Make sure ingredients are at room temperature to achieve even cooking.
