Description

A delicious and easy twist on traditional Greek gyros, featuring seasoned chicken, fluffy rice or greens, vibrant veggies, and tangy tzatziki sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice
  • 2 cups cooked basmati rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • Fresh parsley for garnish


Instructions

  1. Prepare the chicken: In a bowl, mix olive oil, oregano, garlic powder, smoked paprika, salt, and pepper. Add chicken thighs, ensure they are coated well, and let them marinate for about 10-15 minutes.
  2. Cook the chicken: Heat a large skillet over medium-high heat. Add the marinated chicken thighs and cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through (the internal temperature should reach 165°F). Remove from heat and let it rest for a few minutes. Slice into strips.
  3. Make the tzatziki sauce: In a medium bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt. Adjust seasoning based on your taste, and set aside to let the flavors meld.
  4. Assemble the bowls: In bowls, layer the cooked rice or quinoa, followed by sliced chicken, cherry tomatoes, diced cucumber, and red onions.
  5. Top it off: Drizzle the tzatziki sauce generously over the top and garnish with fresh parsley.

Notes

For optimal flavor, marinate the chicken the night before. You can also prepare tzatziki sauce in advance.
