Ingredients
- 6-8 thinly sliced chicken breasts
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 1/2 cups buttermilk
- 1 egg
- 1 Tbs hot sauce
- Oil for frying
- 1/4 cup reserved oil from frying
- 1/3 cup flour
- 2 cups milk
- Salt & pepper to taste
Instructions
- Prepare the oil: Heat oil in a deep fryer or large pan on the stove until it reaches 325°F.
- Create the dry mixture: In a large bowl, whisk together the flour, baking powder, baking soda, salt, pepper, and garlic powder until well combined.
- Combine wet ingredients: In another bowl, whisk together the buttermilk, egg, and hot sauce until smooth.
- Dredge the chicken: Dredge the chicken in the flour mixture, ensuring it’s fully coated. Then, dip it into the egg mixture followed by another coat in the flour mixture.
- Fry the chicken: Place the breaded chicken pieces into the hot oil carefully. Fry each side for about 3-5 minutes until golden brown. Remove and drain on a paper towel-lined plate.
- Make the gravy: Add 1/4 inch of reserved oil from frying to a large pan and heat on medium-high. Stir in 1/3 cup of flour and cook until absorbed, about 1 minute. Slowly whisk in the milk, stirring consistently to blend.
- Serve: Pour the gravy generously over each chicken breast before serving.
