Description

Ingredients

  • 2 chicken breasts (boneless and skinless)
  • Salt and pepper, to taste
  • 1 cup seasoned breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 4 slices of soft sandwich bread (e.g., ciabatta, brioche, or whole wheat)
  • 2 cups romaine lettuce, chopped
  • 1/4 cup Caesar dressing
  • 1/2 cup freshly grated Parmesan cheese
  • Olive oil (for frying)


Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and pepper on both sides and let them rest for about 10 minutes.
  2. Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and seasoned breadcrumbs in a third. Coat each chicken breast in flour, dip into the egg, and then coat with breadcrumbs for maximized crispiness.
  3. Heat the oil: In a large skillet, heat about 1/2 inch of olive oil over medium-high heat until shimmering.
  4. Fry the chicken: Carefully add the breaded chicken to the skillet without overcrowding. Cook for about 5-7 minutes on each side until golden brown and cooked through. Use a meat thermometer to ensure it reaches 165°F. Drain on paper towels.
  5. Mix the salad: In a bowl, mix the chopped romaine and Caesar dressing until the lettuce is evenly coated.
  6. Assemble the sandwiches: On each slice of bread, layer a fried chicken breast, a scoop of the Caesar salad, and a generous sprinkle of grated Parmesan cheese. Top with another slice of bread.
  7. Grill the assembled sandwiches in the skillet for 2 minutes on each side, until golden and warm (optional).

Notes

For a lighter option, use grilled chicken instead of fried. Store leftovers in an airtight container for up to three days.
