Description
A quick, delicious chicken stir fry packed with nutrition and flavor, ready in under 30 minutes.
Ingredients
- 1 lb chicken breast, sliced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Cooked rice, for serving
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken to the skillet and stir-fry for about 5-7 minutes until cooked through.
- Once the chicken is done, add the minced garlic and ginger, and stir-fry for another minute.
- Toss in the mixed vegetables and stir-fry for about 3-4 minutes until tender.
- Mix together soy sauce, oyster sauce, and cornstarch in a bowl, then pour over the stir-fry.
- Cook for an additional 2 minutes until the sauce thickens.
- Serve hot over a bed of cooked rice.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for 2-3 months.
