Description

A quick, delicious chicken stir fry packed with nutrition and flavor, ready in under 30 minutes.


Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Cooked rice, for serving


Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken to the skillet and stir-fry for about 5-7 minutes until cooked through.
  3. Once the chicken is done, add the minced garlic and ginger, and stir-fry for another minute.
  4. Toss in the mixed vegetables and stir-fry for about 3-4 minutes until tender.
  5. Mix together soy sauce, oyster sauce, and cornstarch in a bowl, then pour over the stir-fry.
  6. Cook for an additional 2 minutes until the sauce thickens.
  7. Serve hot over a bed of cooked rice.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for 2-3 months.
