Description

A warm, comforting bowl of chicken and wild rice soup that’s wholesome, low in calories, and perfect for chilly nights.


Ingredients

  • 1 lb chicken breast or thighs
  • 1 cup wild rice
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup mushrooms (optional)
  • 6 cups low sodium chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • 1 tbsp olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic; sauté until veggies soften.
  2. Add chicken, wild rice, mushrooms (if using), broth, bay leaves, thyme, salt and pepper. Bring to a simmer.
  3. Cook for 40-50 minutes, or until rice is tender and chicken is cooked through.
  4. Remove chicken, shred with forks, and return to pot.
  5. Stir in parsley, taste for seasoning, and serve warm.

Notes

For best results, sauté the vegetables first. If reheating, add extra broth or water as wild rice absorbs liquid.
