Description
A cozy and comforting soup that captures all the flavors of traditional lasagna in an easy-to-make dish.
Ingredients
- 1 lb ground meat (beef, turkey, or sausage)
- 8 oz lasagna noodles, broken into pieces
- 4 cups chicken broth
- 2 cups heavy cream
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, cook the ground meat over medium heat until browned. Drain any excess fat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Stir in the chicken broth, heavy cream, broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until the noodles are tender.
- Stir in the ricotta cheese and half of the mozzarella and Parmesan cheeses until melted and well combined.
- Serve hot, garnished with fresh basil and the remaining cheeses.
Notes
For a richer flavor, use homemade chicken broth. Feel free to add vegetables like spinach or mushrooms for extra nutrition. For heat, add crushed red pepper flakes.
