Description

A cozy and comforting soup that captures all the flavors of traditional lasagna in an easy-to-make dish.


Ingredients

  • 1 lb ground meat (beef, turkey, or sausage)
  • 8 oz lasagna noodles, broken into pieces
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. In a large pot, cook the ground meat over medium heat until browned. Drain any excess fat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the chicken broth, heavy cream, broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until the noodles are tender.
  4. Stir in the ricotta cheese and half of the mozzarella and Parmesan cheeses until melted and well combined.
  5. Serve hot, garnished with fresh basil and the remaining cheeses.

Notes

For a richer flavor, use homemade chicken broth. Feel free to add vegetables like spinach or mushrooms for extra nutrition. For heat, add crushed red pepper flakes.
