Description

A creamy and flavorful twist on traditional chili, perfect for chilly days and gatherings.


Ingredients

  • 2 cups shredded chicken
  • 1 can (15 oz) white beans
  • 1 can (10 oz) green chilies
  • 1 cup corn
  • 1 package cream cheese (8 oz)
  • 3 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)


Instructions

  1. In a large pot or slow cooker, combine shredded chicken, white beans, green chilies, corn, and chicken broth.
  2. Add garlic powder, onion powder, cumin, salt, and pepper.
  3. For Stove Top: Bring to a simmer over medium heat and stir in the cream cheese until melted and creamy.
  4. For Slow Cooker: Cook on low for 4-6 hours, then stir in cream cheese until well combined.
  5. Serve hot, garnished with chopped cilantro.

Notes

For a spicier version, add diced jalapeños or increase the amount of green chilies. Use rotisserie chicken for an even quicker meal. If you prefer a thicker chili, you can mash some of the white beans.
