Ingredients
- 2 cups shredded chicken
- 1 can (15 oz) white beans
- 1 can (10 oz) green chilies
- 1 cup corn
- 1 package cream cheese (8 oz)
- 3 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Chopped cilantro (for garnish)
Instructions
- In a large pot or slow cooker, combine shredded chicken, white beans, green chilies, corn, and chicken broth.
- Add garlic powder, onion powder, cumin, salt, and pepper.
- For Stove Top: Bring to a simmer over medium heat and stir in the cream cheese until melted and creamy.
- For Slow Cooker: Cook on low for 4-6 hours, then stir in cream cheese until well combined.
- Serve hot, garnished with chopped cilantro.
Notes
For a spicier version, add diced jalapeños or increase the amount of green chilies. Use rotisserie chicken for an even quicker meal. If you prefer a thicker chili, you can mash some of the white beans.
