Ingredients
- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (10 oz) enchilada sauce
- 8 small flour or corn tortillas
- 1/2 cup chopped onion (optional)
- 1/2 cup sour cream (for serving)
- Chopped cilantro (for garnish, optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, half of the cheese, and half of the enchilada sauce.
- Warm the tortillas in a microwave or on a pan until they are pliable.
- Spoon the chicken mixture onto each tortilla and roll them up.
- Place the rolled tortillas in a greased baking dish, seam side down.
- Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
- Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly. Serve with sour cream and garnish with chopped cilantro if desired.
Notes
You can add black beans or corn to the chicken mixture for extra texture. For spice, use a spicy enchilada sauce or jalapeños. Ensure tortillas are warmed for easier rolling.
