A quick and easy take on classic chicken enchiladas, perfect for busy weeknights or entertaining.
Ingredients
- 2 cups shredded chicken
- 2 cups shredded cheese (cheddar or a blend)
- 1 can (10 oz) enchilada sauce
- 8 tortillas (corn or flour)
- 1/2 cup diced onions (optional)
- 1/2 cup sour cream (for serving)
- Chopped cilantro (for garnish, optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine shredded chicken, 1 cup of cheese, and half of the enchilada sauce.
- Place a small amount of the chicken mixture in each tortilla, roll them up, and place them seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
- Bake for 25 minutes, or until the cheese is bubbly and golden.
Notes
For added flavor, consider stirring in black beans or corn. Adjust spice level by adding jalapeños or using spicy enchilada sauce.
