Ingredients
- 2 lbs ground beef (or ground turkey)
- 1 small onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) tomato sauce
- 2 cups beef broth
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 2-3 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- Toppings: shredded cheese, sour cream, green onions, avocado slices, tortilla chips (optional)
Instructions
- Prep Your Ingredients: Start by chopping the onion, green bell pepper, and garlic. Measure out all your spices and beans.
- Brown the Meat: In a large pot, cook the ground beef (or turkey) over medium heat until it’s browned. Drain any excess fat.
- Sauté the Vegetables: Add the diced onion, bell pepper, and minced garlic to the pot. Sauté for about 5 minutes, until the vegetables soften.
- Build the Base: Stir in the chili powder, cumin, paprika, cayenne, salt, and black pepper. Cook for 1-2 minutes to release the spices’ flavors.
- Add the Tomatoes and Broth: Pour in the diced tomatoes (with juices) and tomato sauce. Add the beef broth and stir to combine.
- Let It Simmer: Bring the mixture to a boil, then reduce the heat to low. Let it simmer uncovered for about 20-30 minutes, stirring occasionally.
- Add the Beans: Mix in the kidney and pinto beans, and cook for another 10-15 minutes to thicken and make your chili hearty.
- Taste and Adjust: Sample the chili and adjust the seasoning if necessary, adding more salt, pepper, or chili powder if desired.
- Serve and Enjoy: Ladle the chili into bowls and add your favorite toppings.
Notes
For a vegetarian option, use plant-based ground meat and vegetable broth. You can also experiment with different beans.
