Description

A delicious combination of spiced cake and pumpkin pie topped with cream cheese frosting, perfect for Thanksgiving.


Ingredients

  • 16 oz Cream Cheese, softened
  • 1 cup Granulated Sugar
  • 2 tbsp All-Purpose Flour
  • 1 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • 1 cup Heavy Whipping Cream
  • 3 Large Eggs
  • 2 cups All-Purpose Flour
  • 1 tbsp Baking Powder
  • 1 tsp Ground Cinnamon
  • 1 tsp Ground Ginger
  • 1 tsp Ground Nutmeg
  • 1 tsp Ground Cloves
  • 1 tsp Allspice
  • 1/2 cup Butter
  • 1 cup Brown Sugar
  • 1/2 cup Vegetable Oil
  • 2 tsp Pure Vanilla Extract
  • 1 9-inch Pumpkin Pie, premade
  • 1/2 cup Unsalted Butter, at room temperature
  • 2 cups Powdered Sugar
  • 1/4 cup Heavy Whipping Cream


Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 9-inch cake pans.
  2. Cream butter and brown sugar until light and fluffy, then mix in vegetable oil, eggs, and vanilla extract.
  3. In another bowl, whisk together all-purpose flour, baking powder, and spices. Gradually incorporate dry mixture into wet ingredients.
  4. Pour half of the batter into each prepared pan and bake for 25-30 minutes until a toothpick comes out clean. Cool on a wire rack.
  5. Beat cream cheese and sugar until smooth, then add flour and vanilla, followed by cinnamon and whipped cream until fluffy.
  6. Assemble by layering spiced cake, cream cheese filling, pumpkin pie, and more filling, topping with the second cake layer and remaining frosting.
  7. Chill the assembled piecaken in the fridge for at least an hour before serving to allow flavors to meld.

Notes

This piecaken can be made ahead and stored in the refrigerator, improving flavor over time.
