Ingredients
- 1 head of cabbage, chopped
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 carrots, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- Juice of 1 lemon
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until onions are translucent.
- Add carrots, bell pepper, and zucchini; cook for about 5 minutes.
- Add chopped cabbage, diced tomatoes, and vegetable broth to the pot.
- Stir in thyme and black pepper, bring to a boil.
- Reduce heat and simmer for 30 minutes until veggies are tender.
- Adjust seasoning as needed and add lemon juice before serving.
