Ingredients

  • 1 head of cabbage, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • Juice of 1 lemon


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until onions are translucent.
  3. Add carrots, bell pepper, and zucchini; cook for about 5 minutes.
  4. Add chopped cabbage, diced tomatoes, and vegetable broth to the pot.
  5. Stir in thyme and black pepper, bring to a boil.
  6. Reduce heat and simmer for 30 minutes until veggies are tender.
  7. Adjust seasoning as needed and add lemon juice before serving.
