Description
A delightful dish filled with the flavors of taco seasoning, ground meat, and fresh veggies, served over a fluffy bed of rice.
Ingredients
- 1 cup uncooked white rice
- 2 cups water or chicken broth
- 1 lb ground beef or turkey
- 1 packet taco seasoning (about 1 oz)
- 1 can (15 oz) black beans (drained and rinsed)
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes (fresh or canned)
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- ½ cup salsa (for topping)
- 2 tablespoons olive oil
- To taste salt and pepper
- Optional fresh cilantro and lime wedges (for garnish)
Instructions
- In a cozy pot, combine the uncooked rice and the water (or chicken broth). Bring to a gentle boil, then reduce the heat, cover, and let it simmer for about 15-20 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned.
- Once the meat is cooked, sprinkle in the taco seasoning and mix well.
- Add the black beans, corn, and diced tomatoes to the skillet and sauté for a few minutes.
- Once the rice is cooked, fluff it with a fork.
- Assemble your bowl with a scoop of rice, seasoned meat mixture, shredded lettuce, cheese, salsa, and optional garnishes.
Notes
For added creaminess, serve with sour cream or guacamole. Feel free to customize with your favorite spices or seasonal veggies.
