Description

A quick and tasty meal that brings together the flavors of tacos in a fun and easy way, perfect for busy weeknights.


Ingredients

  • 1 cup rice
  • 1 lb ground beef or chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Sour cream, for serving


Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet over medium heat, cook the ground beef or chicken until browned.
  3. Add the taco seasoning, black beans, corn, and diced tomatoes to the skillet. Cook for an additional 5-7 minutes until heated through.
  4. Assemble the bowls by placing a scoop of rice at the bottom, followed by the taco mixture.
  5. Top with shredded cheese, avocado slices, cilantro, and a dollop of sour cream.
