Ingredients
- 1 cup rice
- 1 lb ground beef or chicken
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Sour cream, for serving
Instructions
- Cook the rice according to package instructions.
- In a skillet over medium heat, cook the ground beef or chicken until browned.
- Add the taco seasoning, black beans, corn, and diced tomatoes to the skillet. Cook for an additional 5-7 minutes until heated through.
- Assemble the bowls by placing a scoop of rice at the bottom, followed by the taco mixture.
- Top with shredded cheese, avocado slices, cilantro, and a dollop of sour cream.
