Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup vegetable oil
  • 2 tbsp unsalted butter, melted
  • 2 tbsp lemon zest (from about 2 lemons)
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 1 cup powdered sugar
  • 2-3 tbsp fresh lemon juice (for glaze)
  • 1/2 tsp lemon zest (optional, for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, combine eggs, granulated sugar, sour cream, vegetable oil, and melted butter. Whisk until smooth and creamy.
  4. Stir in lemon zest, lemon juice, vanilla extract, and lemon extract.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes or until a toothpick comes out clean.
  7. Cool the loaf in the pan for 10 minutes, then transfer to a wire rack.
  8. For the glaze, whisk together powdered sugar and 2-3 tablespoons of lemon juice until smooth. Adjust consistency as needed.
  9. Once cooled, drizzle the glaze over the loaf and garnish with additional lemon zest if desired.

Notes

Store the loaf in an airtight container at room temperature for up to 3 days or refrigerate for a longer shelf life. For freezing, wrap tightly in plastic wrap and aluminum foil.
