A simple dish featuring tender slow-cooked chicken infused with bright lemon and herbs, served over fluffy rice.
Ingredients
- 4 chicken breasts
- 1 cup lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup rice
- 2 cups water
- Fresh herbs for garnish (optional)
Instructions
- In a slow cooker, mix together lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
- Add the chicken breasts, turning to coat them in the marinade.
- Pour the chicken broth over the chicken.
- Cover and cook on low for about 360-420 minutes or until the chicken is cooked through.
- About 30 minutes before serving, cook the rice according to package directions using water.
- Fluff the rice and serve with the lemon herb chicken, garnished with fresh herbs if desired.
Notes
For a richer flavor, use bone-in chicken thighs. You can also add vegetables like carrots or bell peppers for a complete meal.
