Ingredients
- 4 chicken breasts
- 2 lemons (juiced and zested)
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 4 cloves garlic (minced)
- 1 cup chicken broth
- Salt and pepper to taste
- 2 cups cooked rice
- Fresh parsley for garnish
Instructions
- Place the chicken breasts in the slow cooker.
- In a bowl, mix together lemon juice, lemon zest, thyme, rosemary, garlic, chicken broth, salt, and pepper.
- Pour the mixture over the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- 30 minutes before serving, cook rice according to package instructions.
- Once the chicken is cooked through, shred it and stir it back into the sauce.
