Ingredients
- 1 lb beef (chuck or brisket)
- 4 cups beef broth
- 2 cups water
- 2 packets ramen noodles
- 4 cloves garlic, minced
- 1 inch ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon chili paste (optional)
- Soft-boiled eggs (for topping)
- Fresh greens (for topping)
- Crunchy vegetables (for topping)
Instructions
- Place the beef in the slow cooker and add beef broth, water, garlic, ginger, soy sauce, sesame oil, and chili paste. Stir gently to combine.
- Cover and cook on low for 6-8 hours, or until the beef is fork-tender.
- Remove the beef and shred it with two forks, then return it to the slow cooker.
- In the last 30 minutes of cooking, add the ramen noodles to the broth.
- Serve hot topped with soft-boiled eggs, fresh greens, and crunchy vegetables.
