Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 bell pepper (any color), sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Flour tortillas (for serving)
- Optional toppings: sour cream, salsa, avocado
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced chicken, bell pepper, onion, olive oil, chili powder, cumin, garlic powder, salt, and black pepper. Toss until coated.
- Spread the mixture evenly on a large sheet pan in a single layer.
- Bake for 20-25 minutes, or until the chicken is cooked through and vegetables are tender.
- Remove from oven and let cool for a few minutes.
- Warm flour tortillas, fill with the chicken and vegetable mixture, and add optional toppings.
Notes
For added flavor, marinate the chicken and veggies in the spices overnight. Can also substitute chicken with shrimp or tofu for variations.
