Description

A heartwarming and flavorful one-pot soup that combines the comforting essence of lasagna with nutritious spinach and savory sausage.


Ingredients

  • 1/2 lb ground sausage
  • 1 small onion, chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 4 cups baby spinach
  • 5 cups low-sodium chicken broth
  • 5 lasagna noodles, broken
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste


Instructions

  1. In a large pot, cook the ground sausage over medium heat until browned.
  2. Next, add the chopped onion, sliced mushrooms, and minced garlic; cook until softened, about 5 minutes.
  3. Pour in the chicken broth and add the broken lasagna noodles. Bring to a boil.
  4. Reduce heat and simmer until noodles are tender, about 10 minutes.
  5. Stir in baby spinach and dried herbs, cooking until spinach is wilted.
  6. Season with salt and pepper to taste.
  7. Serve hot with crusty bread or salad.

Notes

For a creamier texture, stir in a splash of cream before serving. You can also use ground turkey or chicken for a lighter version.
