Ingredients
- 1/2 lb ground sausage
- 1 small onion, chopped
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 4 cups baby spinach
- 5 cups low-sodium chicken broth
- 5 lasagna noodles, broken
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
Instructions
- In a large pot, cook the ground sausage over medium heat until browned.
- Next, add the chopped onion, sliced mushrooms, and minced garlic; cook until softened, about 5 minutes.
- Pour in the chicken broth and add the broken lasagna noodles. Bring to a boil.
- Reduce heat and simmer until noodles are tender, about 10 minutes.
- Stir in baby spinach and dried herbs, cooking until spinach is wilted.
- Season with salt and pepper to taste.
- Serve hot with crusty bread or salad.
Notes
For a creamier texture, stir in a splash of cream before serving. You can also use ground turkey or chicken for a lighter version.
