Ingredients
- 2 cups all-purpose flour

- 1 cup vegetable oil

- 2 tsp vanilla extract
- 1 tbsp red food coloring
- 1 cup cream cheese
- 1/2 cup powdered sugar

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, cocoa powder, baking soda, and salt.
- In another bowl, combine sugar, vegetable oil, buttermilk, eggs, vanilla extract, and red food coloring.
- Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
- Drop tablespoon-sized dollops of the batter onto the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are set. Let cool.
- In a separate bowl, beat cream cheese, powdered sugar, and softened butter until creamy.
- Spread the cream cheese filling between two whoopie pie cookies to form a sandwich.
