Description

Deliciously rich and visually striking Red Velvet Whoopie Pies with a creamy filling, perfect for special occasions or just to brighten your day.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1 cup cream cheese
  • 1/2 cup powdered sugar
  • 1/4 cup butter, softened


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, cocoa powder, baking soda, and salt.
  3. In another bowl, combine sugar, vegetable oil, buttermilk, eggs, vanilla extract, and red food coloring.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
  5. Drop tablespoon-sized dollops of the batter onto the prepared baking sheet.
  6. Bake for 10-12 minutes or until the edges are set. Let cool.
  7. In a separate bowl, beat cream cheese, powdered sugar, and softened butter until creamy.
